The essential definition
Caviar is the salted roe of sturgeon. The eggs are carefully separated and prepared for eating. Other fish roe can be delicious too, but traditional caviar refers to sturgeon roe. Different sturgeon types, preparation and individual tins can vary in colour, texture and flavour.
What does it taste like?
Expect a savoury, delicate taste and pearls that release their flavour as you eat them. Some caviars feel creamy or buttery; others have a firmer pop or a gentle nutty finish. Taste a small spoonful on its own before adding accompaniments so you can notice the character of the tin.
Your first serving
Keep your tin refrigerated according to its label. Open it shortly before serving and present small portions, ideally with a mother-of-pearl or other non-reactive spoon. Mini blinis and a little crème fraîche are familiar accompaniments, but they are optional.
